Farewell

Well folks, today is the day. Welcome to the end. We are glad to have brought you a little slice of Russian heaven, while the opportunity was present. I know many of you have expressed great remorse at our closing, but when it's time to move on, it's time. We simply did not have enough resources to sustain ourselves, but perhaps if you do we can sell you the trailer. It'll be a lot of work, but that's simply always the case with any investment. Anyway, we're keeping it really simple today. Our last menu:

Wrapping up

Good morning everyone. Welcome to another day of Oly Piroshki, something I will soon no longer be able to say. Yes, you do hear right, we are approaching our final days of Oly Piroshki. A short-lived, yet beautiful addition to the cuisine of Olympia. But more importantly of local and organic food. Though we won't be around much longer, do remember to eat as much nutritious food as is available to you. And know that "organic" is not supposed to be a buzz word, but a direct representation of the fuel you are feeding your body and living off of. The most important investment you can make is to eat local, organic foods- it is one way to protect our ecosystem, our local farmers, our health, and the planet we live on. There's definitely much to be done before organic foods are widely available to all people of all income levels and before there is no longer a need to distinguish between "organic" and "conventional" foods, but it is something we should strive for. Food should not be about convenience or simply about taste (though I do love tasty food!), but rather nutrition and sustainability. The web is vast, and we should stop putting it all on ourselves as individuals to change the food system, but remember to hold lawmakers and corporations accountable and demand that our food is not laced with chemicals are factory farms remotely acceptable. So buy CSAs, go to your farmers market,speak up when you can, get involved. In the mean time, our menu:

Hello all you fine Olympia folk. Sorry for the delay in posting this morning, we've simply been battling the oven's temperamental nature. It has made a temporary agreement to stay at the temperature we desire, but we are not sure how long this agreement will hold. The baked goods are very much so dependent on steady hot temperatures, which we were failing to achieve yesterday afternoon. We'll see how it goes today. But, as everyone who has already tried them knows, are deep-fried piroshki are absolutely delicious and very nutritious (being made with wholesome ingredients and fried in good-for-your-heart rice bran oil). And upon request we will fry the chicken stroganoff and creamy mushroom piroshki. Well here is our tentative menu, assuming the oven will continue to maintain.

Sunshine with piroshki

Happy Thursday everyone. Currently enjoying some eighties music while sauteing up onions. Joyous times all around. Also, has anyone seen the sun today? If not, I recommend going outside and soaking up some good ole' Olympia rays. It really is all anyone can talk about when the sun is out in this town. I sometimes wonder about the dynamic in places that are constantly sunny, like is there as much of a commentary? Any who. When you are strolling about, come on over to the piroshki stand, it'll be great. You can even request the borscht cold (which is how I often eat my borscht) and slurp it up with a savory treat. Oh boy, oh boy! Today is the day some of us have been waiting for, for the last 365 days. The Procession of the Species is such a great time to be in Olympia, appreciating the myriad of people and other animals that inhabit this world. At 4:30Pm in Downtown Olympia the parading shall begin, at least of the official sort. Before then, we are going to open up for all of those who would love some delicious food, without the huge crowds and tightly packed together tables. Which is for some a good time, but not for all. Happy Earth Day! Today means a lot of exciting things for the world. For instance there is the World People's Conference on Climate Change, being held in Cochabamba, Bolivia where people are brainstorming ways to keep this planet alive and well. Earth Day also means that Procession of the Species is right around the corner, which for any of you who don't know is one of the most liveliest events in Olympia, held in celebration of the diversity of life on Earth. There are many ways we can make an impact bettering the world, one of which is to choose to support local businesses and local agriculture. It's important to take care of one another and grow together as a community in tune with the needs of the planet, which is something we strive to do at Oly Piroshki. Yum, yum, yum! Saturday has come once again and Oly Piroshki is about to open with just the right combination of European flavors to satisfy your tummy. The menu is absolutely delightful today! Delicious Eastern European food til 4pm

Wow! What a beautiful day it is outside. A fantastic day to stroll around the Westside of Olympia and grab a bit of Eastern European food! Where else could you acquire such a great treat beside Oly Piroshki? The kitchen is smelling alluringly delicious and we just took a fresh batch out of the oven. And today there are only five precious hours to come on by the piroshki stand since we shall be closing at 4pm. Believe me, if I could run the stand single handedly, I would, but for now we are missing a wonderful cook to cover the 4pm-7pm piroshki needs of Olympia, WA. So as we find the perfect cook to join our family, we have to close up for the latter part of the day. Tomorrow, Saturday, we shall be operating our usual 12pm-7pm hours, so if you can't catch us today, come by tomorrow. For the menu today-

The Best Tripe Soup

Well, well, well. Here we are again on a spectacular Saturday afternoon. The adventures of Oly Piroshki continue, and for anyone who has any sort of high-volume kitchen experience, you know what I mean by adventure. Preparing food to be ready by a certain time is a high art; there are always more variables than you could possibly have accounted for. Whether it's the oven light going off, or running out of potatoes because your batch of 10 lbs decided to do a flip-flop out of the fridge, it's high fun! MMmmmMM! I just had a spoonful of potato with sauerkraut and mustard and boy is it good! It's something we'll be using today in our version of pig in a blanket. We chopped up some Bavarian franks we bought from Stewart's Meats and are nestling them in the most mouth-watering potato sauerkraut mustardy mix you can imagine. And we do have the vegetarians in mind too, so for all of you lovely folk, we'll leave the franks out of the equation. Oh and I did something really exciting yesterday! Let's be the fool

Happy April Fool's Day! Here's something I gleaned from Wikipedia this morning "The Fool is the spirit in search of experience. He represents the mystical cleverness bereft of reason within us, the childlike ability to tune into the inner workings of the world." So let us venture off into this day with an openness we all can recall from childhood. Be the fool. And now onto our exciting menu for today. My goodness. So, for our soup we have homemade dumplings- pelmeni in a delicious beef broth, also, of course, homemade. So for all those who have been waiting to see pelmeni on our menu, here it is, in soup form. Also, there's this really exciting, super good and nutritious plant in season right now called Nettle (something I only discovered moving to the Pacific Northwest, but is popular in Russian cooking too). And we're back to another great week at the piroshki stand. This last Saturday, we had quite the turn-out and pretty long waits. In fact, we couldn't quite handle such a rush. If you were one of those people waiting in the cold for piroshki, come back and we'll make it up to you. If anything, Saturday was a learning experience. One in which we discovered that sometimes people want more piroshki than one has to offer at that particular time.

Rasberry pastries and chebureki

As the days propel us along and we start having dreams about potato maple bacon piroshki, your friends at Oly Piroshki strive to make your eating experience more and more spectacular. We are collecting your suggestions and making up a bunch of our own. Today's specials are a brand new fried pastry, called a cheburek . It is a pan-fried lamb pastry prepared with only the finest ingredients, from-scratch, as always.

Nom, nom, cabbage soup

Meat and potatoes...cabbage and love and...the soup is served! Smoked brisket with cabbage and potatoes soup to be specific.

Missed us?

Cuz we missed you. The adventures of Oly Piroshki have only begun. This last weekend we had a great deal of fun in the kitchen making up pelmeni- little tidbits of Russian joy (probably best described as meat dumplings). We, of course hand-made the pasta dough and minced up some chicken and the delight that is pelmeni were. Now we need to figure out how to make it more accessible to ya'll cuz all that hand making and cute folding is a bit pricey. Oh the joy of trying out something new and then realizing you have to wait awhile to make it happen! Well soon my dearests, soon. Just come bug us about it a bunch. Pan fried goodies

Borscht

Vkusnoye Harcho

Time for another Russian lesson! "Vkusnoye" means delicious and "harcho" is a Georgian soup of lamb and rice. And you guessed it, that's what we have as our soup d'jour (d'jour being French for of the day). Oh what a cultural experience. Well, let's start our week off right. Our piroshki menu:

Happy Saturday, Again!

We're two weeks new now. Yay! So far, so good. I am absolutely delighted over the buzz Oly Piroshki has been creating in town. It's quite flattering. It's the kind of energy that makes working really hard to make this the most fantastic, local, organic Russian piroshki stand. So let's get another Saturday rolling. Our menu for today will be:

Flaky Apple Marmalade

You heard right! We do have a delicious new desert item today- its a flaky, scrumptious Apple Marmalade Piroshki!

Not so seamless

I extend my most sincerest apologies to whoever may have discovered bacon in their potato onion piroshki yesterday. There was a bit of confusion in the afternoon when we were serving up the potato onion piroshki. You see, the difference between the two is a simple seam in the dough. In my mind the one with a seam has bacon and the one without doesn't, but yet once again reality wins the game of life. But, worry not! Because after such a shockingly large mistake we are sure to not commit another one of this magnitude for at least another ten years :)
Anyone who did have bacon in their piroshki and did not want it there, come back and we'll give you a potato onion or whichever other one you would like. Speaking of which here is our menu for today:

Let's start the week off organically

And we're off! To another wonderful week at the piroshki stand. So what do we have in the kitchen today?

Piroshki:
Potato onion
Potato maple bacon

Eggs w/ green onions

Soup:
Porcini spinach

All the produce comes from Organically Grown Northwest. The meats from our local butchers at Stewart's Meats. The eggs are organic Stieber Farms eggies. And the dough is made with the very awesome Shepard's Grain flour. Keep your eyes open for all the farm info on our soon to be updated website. Til then, come eat some delicious Russian food.

Our First Saturday

Really when I say I can't believe that we've been open for a week, I quite literally mean I can't believe it. The buzz throughout the town is growing and I'm so excited about how stoked people are. My heart melted a bit after reading the review we got from Puck on yelp.com.

There is just so much to be done and I have so many ideas (some of my own, some contributed by Oly Piroshki fans). I can't wait for tomorrow, when I can sit down with a notebook and a cup of coffee and get to making a plan of action to make those ideas a reality. From spring menus to making up dessert pastries to interior decorations and so, so much more.

For today, we'll focus in on the cooking. Out of the kitchen shall come magical delights. Back by popular demand we have green apple pear compote for a tasty beverage. Also, people really enjoyed the yam cilantro piroshki, so those will make another appearance throughout the day. We will also have our most popular beef onion, potato maple bacon, potato onion, and beef cheddar piroshki. My mouth is watering just thinking about it. The huge treat though will be the soup, which is a split pea with Stewart Meats hog legs. Absolutely amazing. You can really taste the local.

Late starts and new foods

This morning my alarm decided to let me sleep in a bit and apparently the same rang (or perhaps didn't ring) true for our wonderful dough maker. But nothing to fear we will have delicious piroshki by 11am. And what a menu! Two soups: rustic russian chicken noodle and our homemade borscht. We're also trying out some new piroshki. To start the day there will be cabbage with maple bacon and a simple scrumptious cabbage one for the vegeterians. Later we will have yam cilantro piroshki . Also we will have our classic beef onion plus the newer beef cheddar will make a return appearance. Well, I better get going, hope to see ya'll soon!

Is it Thursday?

Thursday in Russian: четверг (pronounced chetverg). Just a bit of Russian for everyone today, just in case it comes up. Well, the reason I'm stuck on it being Thursday is how quickly time is moving.

Today we are going to do something new: we are going to try making a beef with cheese piroshki (but only a few). My mother and I are currently trying to figure out what the perfect cheese for such a piroshki. For now, we will play around with white cheddar. The piroshki: potato bacon, potato onion, beef onion, and a bit of beef cheddar. Oh and the soup: borscht! It is sure to go quickly, so come grab it while its hot.

Winter Foods

Day 2: We are cooking up some more piroshki. So far, so good. We had a handful of people come by yesterday and everyone who did was super happy with our delicious food. Today we will have the hit specials: beef onion piroshki, mushroom potato piroshki, and cabbage mushroom soup. Also, the green apple pear compote is absolutely delightful. Hope to see you there!

Getting down to business

Today's food shall be made from scratch and with local ingredients.... as usual :) The start of our regular Tuesday- Saturday, 11am-6pm schedule, begins today at 11am. The piroshki for today are: potato and mushroom, potato and maple bacon, potato and onion, and beef with onion. The soup is a tasty mushroom cabbage.

Last night, my mother and I stayed up forever in order to make sure all was just right for today and the baker (who I haven't asked permission to disclose their identity) came in just as we were leaving at 4am to continue the rightness ensuring process.

My mother and I did have a bit of a scare last night when there was a knock on our door at 1am. It was after all, a very loud and forceful knock at 1am. But, no worries, it was simply the police department wondering why there was a car where there usually wasn't one. After a brief explanation of our nocturnal behaviors, they took off.

All our prep came unimpeded thereafter and the food will surely be delicious today.

Party Time

Well, today is the big celebration. Prepping the kitchen for tonight has definitely been an adventure thus far. Probably would have gotten a lot more done yesterday if I hadn't decided to crash into a parked car. Nobody got hurt (except perhaps the cars themselves) and everything is going to be taken care of, but boy did that leave me shook. For today, I think I'll take the bus to tie up any last lose ends outside of the kitchen.

Well, hope to see a lot of wonderful people tonight and to have a grand ole time tasting some scrumptious piroshki and savory soup.

Our latest tasting session

So today is the last day we are opening for free yummy piroshki and soups before our grand opening this Friday! We've got two soups today: a cabbage potato dumpling and a pinto soup with a delicious, all natural, local beef base. The piroshki for today are beef and onion and potato, onion, and a scrumptious maple bacon. Mouth watering goodness.... mmmmm.

Grand Opening Extravaganza!!

We are now preparing for what is sure to be the most amazing event in the whole of Olympia. This upcoming Friday shall be our Grand Opening celebration!! Expect to see fire dancing, raffling of Oly Piroshki gift certificates and other such Russian goodies, an introduction on our local farmers, lots of music, and of course delicious piroshki and soups! Plus, whatever talents I can round up in the course of the next week. It is bound to spectacular!

Working it out

Wow! What an exciting few days! We got a lot of great feedback from everyone who came out to try our delicious food. Now that we have a better understanding of where the rough edges are, we can take the next couple of days to work out the kinks and get those last loose ends tied up. We'll keep everyone posted and are thrilled to be opening soon.

Today's specials being cooked in the piroshki stand are a porcini orzo soup and we're revisiting our potato, onion, bacon piroshki. Come and get them! Everyone who came yesterday was super happy that they did.

Mixing it Up



Time seems to be speeding up as we get closer to the opening of Oly Piroshki.
The other day we got our newest family member (pictured left)... and what an addition! With no time to spare, we began whipping up batches of piroshkis with the brand new mixer!
The first trial was full of fun.... though the dough was a bit lacking. Lesson of the day: if you know the dough isn't ready to be left alone, don't do it. Basically, it was late at night, we were tired, we knew the dough had another rise to go, but in the end, the tired won. When we got to the stand the next morning BOOM!, the dough was twice the size we wanted it to be. Woops!
Well, that motivated the second trial (which happened today). Oh my, was that delicious! Kale and cabbage piroshkis and garlic bread to die for. This week we will continue whipping up magical deliciousness. Soon to be available to the public :)

Almost there

Happy New Years!

It's really exciting to see there is already an interest in piroshkis in Olympia! Though the site may have been quiet for awhile, we have been bustling with getting the piroshki stand up and running. We're almost there, too! The pre-opening health inspection is this upcoming Monday and from there we just need to hire on some awesome people to work with us. Though, trying to figure out who to start a new business with has been quite the endeavor. But, really after that a couple lose ends and off we go! Russian food coming to Olympia soon... perhaps it will even be a debut of Russian cuisine (I may have to research that). Nonetheless, our will definitely be the best this town has seen. Hope to see everyone soon!
